01 / ABOUT THE PLACE

About this place

At Soba Chiso Kagari, dipping a bite of aromatic buckwheat noodles into well-crafted dashi dipping broth is an unhurried pleasure. Served with a firm, chewy bite, the chilled seiro soba releases more of its fragrance with every chew, pairing smoothly with a broth that focuses on deep dashi flavor rather than harsh saltiness.

A major draw here is ordering drinks and snacks before moving on to the noodles. The toasted miso paste, lightly crisped on the surface and rich with roasted aroma, makes an ideal partner for a glass of beer or shochu. Diners can also sip while sharing sliced kamaboko fish cake with freshly grated wasabi, or a tempura assortment of shrimp, maitake mushrooms, asparagus, kabocha squash, and Japanese ginger, seasoned simply with chilled tentsuyu broth or mild salt. Drink options include Asahi Super Dry and Kirin Lager on beer taps, as well as specially selected pure rice sake such as Hana Ippu.

The menu also offers combinations pairing cold seiro or hot kake soba with a daily rice selection and a seasonal small side dish. Depending on the meal, guests can swap their noodles for rich duck-based variations like kamo seiro or kamo nanban, or add grated Japanese yam or spicy grated daikon radish to customize the finish.

Perched on the 2th floor of its building, the space carries the understated feel of an intimate Japanese bistro, equally suited to dining solo or catching up quietly over a drink.
